Khajur Burfi Recipe | Khajur Rolls | Dates and Nuts Rolls | Sugar Free Khajur Ki Mithai
Khajur burfi or dates rolls are filled with dry fruits which are soft in texture and chewy in nature. They make a power-packed workout snack and perfect for those having sweet tooth and don’t want to indulge in refined sugar based desserts. Khajur burfi is completely sugarless as dates are the source of sweetness in this burfi.
First of all chop almond, cashew and pistachio and keep it aside.
Roughly chop the dates and discard their seeds. I am using Medjool dates, they are soft and having caramel sort of taste which makes this burfi tastier. You can coarsely grind them as well, but that makes a dough which is difficult to handle later while mixing in other dry fruits.
Dry roast poppy seeds and keep it ready.
Now heat a nonstick pan on medium low flame and add ghee. Once it melts, add chopped dry fruits and stir continuously for 2-3 minutes. This will give a crunch to dry fruits.
To this add coconut powder, cardamom powder and chopped dates. Mix well and saute for another 2-3 minutes.
After 2-3 minutes switch off the flame and let the mixture cool down.
When the mixture is cool enough to touch make a cylindrical shape by pressing with both hands.
Coat this log with poppy seed so that it covers the whole cylinder shape of the mixture.
Now place this rolled burfi on cling film and wrap up tightly. Keep it in the fridge for an hour to set.
After an hour when the rolled burfi is set, take them out of the fridge. Cut them into 1/2″ thick pieces.
Khajur burfi or dates burfi or dates n nuts rolls are ready to serve on festive occasions.
