Mooli paratha or radish paratha is an Indian flatbread stuffed with grated radish. Stuffing is spiced up with few spices and then stuffed in whole wheat dough portions. These parathas make a wholesome meal for breakfast, lunch or dinner.
Take the wheat flour, oil, salt in a mixing bowl, and combine very well. Knead a soft dough by gradually adding warm water. Keep it covered until stuffing is getting ready.
This will make the dough soft and smooth. It helps while rolling out paratha. You can make stuffed parathas without stuffing coming out if the dough is soft enough.
Prepare mooli stuffing
Peel and grate the radish(mooli) using a grater. Add some salt to it, mix and keep aside for 15-20 mins. It will help in releasing water out of the radish.
After 15 minutes you will notice a lot of water around the grated radish. Rinse all the water from it and squeeze further in order to get rid of the excess water.
Mix all rest dry ingredients to it. Your filling is ready to stuff. Divide it into equal portions.
Rolling Paratha
Divide dough and stuffing into equal portions. With this much quantity of ingredients, I could make 7 parathas or flatbread.
Dust the rolling surface and take one portion. Roll out a circle of about 3″ in diameter.
Place one portion of the mooli stuffing mixture in the middle and gently seal it by bringing all edges together. Pinch it using both hands.
Roll it gently by putting little pressure. Use a circular motion around the center and roll.
Do not worry if stuffing comes out. Just fix and roll further.
Cook paratha
Now heat a griddle and transfer this rolled paratha onto Tawa. Cook for 1-2 minutes or until you see small bubbles forming up.
Flip it on another side and cook for 30 seconds. Apply oil on this side and flip it again.
Cook from both sides until brown in color. Repeat the same with other dough balls.
Mooli paratha or stuffed radish flatbread is ready to serve hot.

Tips
If you want to make stuffed mooli paratha then squeezing extra water is very important. Else it will not be easy to roll out parathas.
Radish stuffing can not be prepared in advance. It starts leaving the water after contacting with other ingredients.
Make all parathas at the same time else radish filling will become soggy and you can not roll parathas further with ease.
The squeezed water can be used for kneading the dough. or you can discard it.
