Sabudana khichdi is also is a popular Maharashtrian breakfast item.Sabudana is known as sago or tapioca pearls. There are many varieties available (small, medium and big pearls) in terms of pearl’s size. Which decides how long sabudana should be soaked. I am using medium sized sabudana or tapioca pearl which takes around 4 hours soaking time.
1/2 tsp mustard seed (replace cumin seeds if required)
2 Green chilies chopped finely (optional)
Sendha namak (fasting salt)
1 Tsp sugar
2 Tblsp lemon juice
Handful chopped green coriander
2 Tsp ghee or clarified butter (replace with oil)
Instructions
First of all soak sabudana or tapioca pearls for 4 hours. Add water just 5 mm more water of the sabudana level in the pan.
Dry roast peanut and rub their skin. It is completely optional as peanut taste great does not matter which way you add. Crush them coarsely and keep aside.
After soaking time over drain the water and keep sabudana ready.
Heat ghee in a kadhai on medium flame. To this add mustard seeds, cut green chilies, and curry leaves.
Once mustard seeds start crackling add boiled potato and saute well for 1 min.
Now add crushed peanut, lemon juice, and sugar. Mix well.
Finally, add soaked sabudana and mix nicely. Adjust salt as per taste. Cover the lid and cook on low flame for 3-4 minutes.
Garnish with chopped green coriander and serve this delicious sabudana khichdi. A great dish for normal days and during fasting.
Notes
If you are cooking sabudana khichdi in normal days then add vegetables like peas, carrot, and cauliflower. It tastes amazing.
If mustard seeds are not allowed during fasting then replace it with cumin seeds.
While soaking adds water 5 mm more to the level of sabudana in the bowl.
